Roasted Corn Salad

I'm really excited to share this fire roasted corn salad with y'all. the flavors are light and citrusy and the sweetness of the corn just screams "Summer" to me


2 ears of fresh corn

1/4 cup diced red bell pepper

1/4 cup diced orange bell pepper

1/4 cup diced sweet onion

1/4 cup diced celery

1/4 cup diced scallions

2 Tbsp mayonnaise

2 Tbsp sour cream

1 Tbsp jalapeño hot sauce

1 tsp lime juice

1 tsp granulated garlic

1 tsp cilantro


  1. Roast corn over open fire, (A grill is great, but a gas burner or hand held torch works fine too.) After roasting, allow to cool, then cut kernels from the cobb and set aside.

  2. In a medium bowl, combine mayo, sour cream, hot sauce, lime juice and granulated garlic.

  3. Add roasted corn, diced peppers, celery, onions, scallions, and cilantro to dressing mixture and stir until well combined.

  4. Garnish with tajin and lime wedge and Enjoy!
