Crawfish Cakes with Tabasco Butter

1 pound American crayfish tail meat

1 garlic clove, minced or pushed through a press

1 tablespoon finely chopped fresh flat-leaf parsley

1 tablespoon Dijon mustard

1 egg, lightly beaten

3 tablespoons mayonnaise

1 tablespoon Old Bay Seasoning

3 drops worcestershire sauce

3 drops hot sauce, such as Tabasco

1/8 teaspoon pepper
