Watermelon Salad 2.0
4 cups yellow watermelon, cubed 2 cups pineapple, diced 1 dragon fruit, peeled and diced .5 cup Arugula .25 cup goat cheese crumbles .25 cup toasted pecans
In a medium bowl layer half the cubed watermelon, half the arugula, followed by half the pineapple, dragon fruit, pecans and goat cheese. repeat layers with the remaining ingredients and serve immediately.
